Tips
Use one or more meats in this recipe. Favorites include crisp broken bacon bits, cooked ground sausage, diced ham, diced chicken.
Seafood is also fantastic in this recipe. Try crab, scallops, shrimp or lobster.
Add more Mama's Mediterranean for a spicier flavor.
Add more Gabe's Original for a sweeter flavor.
Can be served with ketchup, salsa or sour cream.
Do not overcook the strata as the cheese will burn. You can also add the cheese at 30 minutes and bake for 30 more minutes.
Pan size depends on how many eggs you add. This using 12 eggs requires a large, deep baking pan (9" x 13"). Glass or ceramic holds the heat best.
Let sit for longer before cutting for firmer strata.
Serve with fresh fruit or vanilla yogurt.
