Mama's Spicy Chili with Cheese

Comfort food - meat and bean chili prepared with Mama's Mediterranean Spices


  • Mama's Mediterranean Spices
  • 2-3 cups of your choice of beans (canned or bulk)
  • 4-6 cups of crushed, stewed, or chopped tomatoes (canned or fresh)
  • 1 large dry white and or red onion or one bunch green onions
  • 2 pounds ground beef, chicken or turkey
  • 2 green and/or red peppers
  • 1-2 jalapeno peppers (optional)
  • 1 cup shredded sharp cheddar, Mexican/taco blend or Colby Jack cheese


  1. Rinse and soak beans to soften, usually at least one hour (if using bulk/uncooked beans). If using canned beans, drain liquid
  2. Cook ground meat (drain and set into medium cooking pot)
  3. Chop all vegetables (peppers, onions, tomatoes). No need to drain tomatoes if using canned.
  4. Combine all above ingredients with cooked meat
  5. Add 2-3 tablespoons of Mama's Mediterranean Spices to pot. Add more if you like spice/heat (you can also add one more diced jalapeno pepper or use a hotter pepper and include the seeds)
  6. Heat on medium high to boiling, stirring often to combine all ingredients
  7. Reduce heat to simmer/low for 30 minutes to thicken stirring occasionally
  8. Ladle into bowls and top with shredded cheese while hot so cheese melts


You will not need to use any other spices other than Mama's Mediterranean. Stir all ingredients in the packet or container well before adding to the recipe. There are eight (8) ingredients in the Mama's blend including crushed habanero peppers, which gives this chili the spicy kick. Add 2-3 tablespoons and taste for preferred spice level before adding more.

For chunkier chili rough cut all vegetables. For smoother/creamier chili, use a blender, food processor or chopper to get ingredients pureed

Ground chicken and turkey will not need to be drained.

Use hotter index peppers for a spicier chili and include the seeds.

Add more Mama's dry spice if desired. Serve spice blend with small teaspoon to add more heat to individual bowls of chili tor each desired heat/spicy index.

Top with a dollop of sour cream to garnish if desired.
