The easiest most delicious Greek and Mediterranean inspired bruschetta. Topped with a drizzle of Gabe's Original Dressing and Gabe's Original dry spices.
Ingredients
- 1 long loaf of white or whole wheat Baguette
- 2 cups cherry tomatoes, quartered
- 1/4 cup Kalamata olives, pitted + chopped
- 1/4 cup fresh basil, chopped
- 1 Tbsp dried oregano (if fresh, chop)
- 1 Tbsp balsamic vinegar (or vinegar of choice)
- 1 Tbsp olive oil (or flavored oil)
- 1 large clove garlic, halved
- Sea salt + black pepper to taste (optional; Gabe's original has all the spices you'll need)
- Grape seed oil, avocado oil or flavored oil
- 2 Tbsp Gabe's original dry spices
- Gabe's original salad dressing (blended per directions)
Instructions
- Preheat oven to 425 degrees
- Arrange baguette slices (cut 3/4" thick) on a baking sheet and brush with olive oil or flavored oil of choice. Take a garlic clove and rub on both sides of slices for extra flavor. Arrange bread in single layer on the baking sheet.
- Arrange garlic halves between the bread slices.
- Bake baguettes until just slightly golden brown, 5-10 minutes. Set aside.
- Add cherry tomatoes, olives, basil, oregano, balsamic vinegar, olive oil, Gabe's Original Spices (dry). Taste and adjust seasons as needed, adding more Gabe's Original Spices basil or balsamic vinegar as desired. Mix thoroughly.
- Arrange baguettes on a service plate or tray.
- Top baguettes with a generous scoop of mixture. Lightly drizzle with blended Gabe's Original or Mama's Mediterranean salad dressing (for a spicier version, use Mama's).
- Put baked garlic in a small bowl or as a topper on baguettes.
- Serve immediately.
Tips
I double this recipe because it disappears so fast as an appetizer or as a side.
Use Mama's Mediterranean Spices or salad dressing for a spicier kick version.
You may want to bake or cook the garlic first as it can be difficult to get the garlic flavor on the baguette as a base.
